Chocolate Pistachio Roll (Single-Serve)

This little roll? Dangerous. It’s golden, gooey, warm in the middle, and has that dreamy, slightly caramelized edge thing going on. The dough is soft and pillowy thanks to the yogurt, the filling is rich and nutty with creamy pistachio butter and melty chocolate chips, and the ganache on top? Unreal. No yeast, no rising, no chill time—just mix, roll, bake, and devour.

This healthy pistachio roll is what I make when I want a bakery style treat that requires zero sharing, minimal effort, and very little time spent. It’s a single-serve pastry, but is still blood sugar-friendly and protein-packed.

Watch Me Make Single Serve Chocolate Pistachio Roll

And let’s be real—sometimes you just want dessert without committing to a dozen servings or spending an hour in the kitchen. This is the kind of easy recipe that feels indulgent but doesn’t require a whole production. Plus, it’s made with ingredients you probably already have in your pantry. If you’re someone who always keeps a jar of pistachio butter on hand (same), you’re halfway there.

Why You’ll Love It

  • Easy To Make – No rising, no mixers, no leftovers. Just pistachio-chocolate heaven.

  • Protein-Packed Dough – Made with Greek yogurt and einkorn flour, this dough is soft, satisfying, and packs a surprising punch of protein.

  • Better-for-You Treat – Naturally sweetened with coconut sugar and honey, with no refined sugar.

  • Gooey Ganache Topping – Two ingredients, and so good you’ll want to eat it with a spoon (talking from experience).

What You’ll Need

  • Einkorn Flour – Soft, nutty, and easier to digest than regular wheat. You can sub all-purpose flour 1:1 if that’s what you have on hand.

  • Baking Powder – Helps the dough rise and puff up without yeast. Make sure it’s fresh for the best results.

  • Salt – Just a pinch to balance the sweetness and bring out all the flavors.

  • Honey – Adds a little natural sweetness and moisture to the dough. You can use maple syrup if you need to keep it vegan.

  • Greek Yogurt – The protein hero of this recipe. Use a thick, full-fat yogurt for best texture. Dairy-free works too, just go for something thick and without added sugars.

  • Pistachio Butter – This is where ALL the magic happens. Make sure it’s the creamy kind with no added sugar or oils.

  • Coconut Sugar – Unrefined and a lower glycemic index sweetener. You can use maple sugar or date sugar too—just make sure it’s a granulated sweetener.

  • Olive Oil – Adds richness and helps the filling caramelize without butter. You can sub melted coconut oil or avocado oil if needed.

  • Chocolate Chips 70% dark chocolate is best here for contrast. Use date-sweetened, keto, or whatever chips you like—just make sure they melt well.

How To Make It

  1. Preheat oven to 350°F. Line a small dish with parchment.

  2. Mix the flour, baking powder, salt, honey, and yogurt until a dough forms. Knead it by hand for a minute, then let it rest while you make the filling.

  3. In a separate bowl, stir together the pistachio butter, coconut sugar, and olive oil until smooth.

  4. Roll the dough into a rectangle about ¼ inch thick. Spread the pistachio filling evenly over it and sprinkle with chocolate chips.

  5. Cut the dough into strips and roll it up like a cinnamon roll. Place in the prepared dish.

  6. Bake for 15–20 minutes until puffed and golden.

  7. While it’s baking, melt together the pistachio butter and chocolate chips for the ganache. Stir until smooth and glossy.

  8. Once baked, pour the ganache over the warm roll. Drizzle with extra pistachio butter and a sprinkle of chopped pistachios if you’re feeling extra.

Frequently Asked Questions

  • Can I make this chocolate pistachio roll more than one serving?

Yes! In the recipe card you will see an adjustable servings tab which will easily do the math for you!

  • Does this recipe actually taste like a pastry?

It’s not your typical yeasty pastry, but it’s pretty darn close! It’s gooey, it’s decadent, and it truly is indulgent. You won’t miss the yeast at all, I promise.

  • How should I store this dessert?

I really, highly recommend eating this immediately after making for the best experience!

  • Can I swap the einkorn flour to make this gluten free?

Totally. If you need/want to swap it out, i recommend using a gluten free 1:1 all purpose flour. Oat flour is very similar too and should be a 1:1 swap. I do not recommend coconut or almond flour.
