Molten S’mores Banana Bread (Vegan, Gluten Free)
Some recipes are just meant to be made on repeat—and this Molten S’mores Banana Bread is absolutely one of them. It’s the ultimate comfort bake that still checks all the boxes, it’s gluten-free, grain-free, vegan, all of the things. It’s naturally sweetened with banana and a touch of maple syrup, and it’s packed with all the s’mores vibes thanks to gooey marshmallows, melted chocolate chips, and crunchy graham cracker bits.
The texture is soft and moist thanks to extra ripe bananas, but it still holds together beautifully. It’s one of those “no one will believe it’s gluten-free” recipes that feels just a little bit (or a lot) indulgent! However, despite being a more “decadent” recipe, it still boasts a nutrient dense ingredient list! I love using a flax egg here to keep it plant-based and easy on digestion, but if you’re not vegan, you can totally sub in a regular egg. The almond flour keeps it grain free and the almond butter adds richness and healthy fats while helping everything stick together (although lets be real, the abundance of marshmallows also helps with that lol).
Watch Me Make Molten S’mores Banana Bread
This recipe is super kid-friendly, great for summer get togethers or cookouts, and it’s honestly just as good cold out of the fridge as it is fresh and warm. Don’t skip covering the loaf during the last part of the bake — it helps the top get perfectly golden without overdoing it.
This recipe is also easily made keto as well and I have some great swaps in the notes for anyone who wants to keep it sugar free!

Flax Egg – Keeps this bread vegan while still giving it structure.

Frequently Asked Questions
Is this banana bread truly vegan and gluten-free?
Yes! It uses almond flour, which is just finely ground almonds, so no gluten or grains! Especially if you follow my suggestions for grain free graham crackers. It also contains no eggs or dairy so it’s perfect for both vegan and gluten-free diets.
Can I use regular marshmallows?
For a vegan version, use vegan marshmallows, I suggested my favorite brand in the ‘what you’ll need’ section. Regular marshmallows will work perfectly fine but aren’t vegan.
How do I store this bread?
Store it in an airtight container at room temperature for 2 days or in the fridge up to a week. It also freezes really well. Just wrap individual slices in parchment paper and store in an airtight container or freezer safe bag.
Can I make this without bananas?
Since this is a ‘banana bread’ recipe, no I do not recommend substituting the banana, but if you’re looking for a s’mores inspired recipe that is banana free try this one!
Is this bread sweet enough for dessert?
Absolutely—because of all the mix-ins this is actually one of my more ‘decadent’ desserts. Which is why i keep the sugar amount in the actual banana bread batter minimal. The filling sweetens it plenty!
