What You’ll Need

  • Pumpkin Purée: Adds moisture and that fall flavor.

  • Maple Syrup: For warmth, sweetness, and extra softness.

  • Almond Butter: Helps bind them and keeps the blondies chewy without any oil. I use Abby’s Better Butter.

  • Almond Flour + Oat Flour: The combo creates the perfect texture, soft, tender, and gooey perfection.

  • Pumpkin Spice: Make sure you use canned pumpkin puree, not pumpkin piue filling.

  • Chocolate Chips: Folded in + extra sprinkled on top for super melty pockets throughout.

How To Make

  1. Preheat the oven to 350°F and line a loaf pan with parchment.

  2. Whisk egg, pumpkin puree, almond butter, maple syrup, and vanilla until smooth.

  3. Add almond flour, oat flour, baking powder, baking soda, and pumpkin spice. Mix until a thick batter forms.

  4. Fold in the chocolate chips, then spread the batter evenly into the pan. Sprinkle a few extra chips over the top.

  5. Bake for 25–32 minutes, or until the center is set and the top springs back.

  6. Cool completely before slicing into bars.
