Chocolate Chips: Folded in + extra sprinkled on top for super melty pockets throughout.
How To Make
Preheat the oven to 350°F and line a loaf pan with parchment.
Whisk egg, pumpkin puree, almond butter, maple syrup, and vanilla until smooth.
Add almond flour, oat flour, baking powder, baking soda, and pumpkin spice. Mix until a thick batter forms.
Fold in the chocolate chips, then spread the batter evenly into the pan. Sprinkle a few extra chips over the top.
Bake for 25–32 minutes, or until the center is set and the top springs back.
Cool completely before slicing into bars.
