Banoffee Protein Cookie (Gluten Free, Dairy Free)

My take on the classic British dessert Banoffee Pie which gets its name from the ingredients used to make it: bananas and toffee! I turned it instead into a giant protein cookie, with an easy 3 ingredient dairy free caramel, whipped coconut cream, fresh banana slices and crushed graham crackers. It is a total mouthful in all the best ways.

At this point I’m pretty well versed in single serve recipes, especially desserts (because I LOL at sharing). They’re some of my favorite things to make because they’re quick, satisfying, and perfect when you just need a little sweet fix without a ton of leftovers. (Though let’s be real—when has leftover dessert ever gone to waste?)

Protein cookies have become one of my favorite go-to’s when I’m craving a single-serve, high-protein dessert. They’re fun to experiment with—flavors, textures, toppings—you can really get creative. Ok, im not going to lie to you this recipe is slightly more involved than my usual protein cookies—but only because of the caramel. That said, it’s still one of the easiest caramels I’ve ever made. If you’re in a hurry, I’ve got a shortcut version [linked here], but I love using the stovetop method for these Banoffee Protein Cookies because it feels more authentic to the original dish, which uses a thick dulce de leche made with sweetened condensed milk. While I’m all for the real thing in moderation, I wanted a dairy-free, refined sugar–free twist. So I whipped up a simple 3-ingredient coconut caramel that’s just as dreamy—if not better. Bonus: you get a boost of MCTs from the coconut. Win-win.

  • Oat Flour - Helps to keep the cookie soft without any gluten (be sure to buy a gluten free certified brand, or just substitute with more almond flour).

  • Baking Powder - Helps the cookie to rise and makes it extra fluffy.

How To Make

  1. In a bowl, mix all cookie ingredients until smooth, adding almond milk 1 tbsp at a time until a thick dough forms.

  2. Shape into a cookie and bake at 350°F for 7-9 minutes.

  3. While baking, make the caramel: whisk coconut milk, date sugar, vanilla, and salt in a saucepan over medium-low heat. Simmer for 20–30 minutes, stirring constantly, until thick and golden.

  4. Let the cookie cool completely.

  5. Top with caramel, then melted coco whip, and finish with sliced bananas and crushed graham crackers. Enjoy!
