Protein Powder - Use a vanilla flavor protein powder for this. I used Truvani (Code: SARI) because it has clean ingredients and the texture works perfectly. I don’t recommend whey protein because it will affect the texture.
Almond Milk - Helps the dough to come together. If you prefer to use dairy milk or another non dairy milk, feel free!
Applesauce - Replaces the need for any egg or oil.
Almond Extract - Makes that classic sugar cookie taste. Be careful to measure exactly! it is very strong.
Coconut Yogurt - The base of the frosting.
Salt - Balances the flavors.
Dye Free Sprinkles (optional) - Definitely adds to the sugar cookie feel. I recommend this brand.
How To Make
Preheat the oven to 350F.
Mix together all of the cookie ingredients in a bowl and place it on a parchment lined baking sheet. Press down lightly with your palm.
Bake for 8 minutes until lightly golden. Cool completely.

This recipe was designed to use protein powder for the texture and flavor — I wouldn’t recommend skipping it. You could try using collagen peptides or subbing in more flour, but the texture/flavor won’t be the same.
Can I prep this ahead?
It’s best fresh, but you can mix the dough ahead of time and store it in the fridge, then bake when you’re ready!
How do I keep it soft?
Don’t overbake — pull it out when the edges are just set and the center still looks a little soft. It will continue to set as it cools.
